Depends on what you want to play.

Stars probably has the most/best tournies They also have the best FPP's by far of any site.
Absolute has a good intial deposit and many freerolls
Full Tilt has very easy cash games and good software. (Whoo hoo for adjustable table sizes)

So just go to their webpages and read about them. Its very helpful

Don't forget that a lot of the poker rooms out there share the same players within a network, so there are not really as many poker rooms to choose from as you think.
For example, the iPoker network has at least 20 different poker rooms sharing their players, including VC Poker, Noble and Titan.
Player numbers has got to be a big factor in whichever card room you choose - some of the smaller rooms are known for having fishy players at certain games, but a big room will guarantee you will have a wide range of poker games to choose from 24/7.
If you want to do some homework the venerable pokersitescout.com has more details about which rooms belong to which poker networks at www.pokersitescout.com/pokernetworks.asp and gives up-to-date information on the number of players playing cash games at each site.
You can get the total number of players at each site/network at www.pokercounts.com
