Greek Salad (amounts will vary depending on how may people. This salad keeps well for a day or two)
Roughly chopped vine tomatoes (deseed if you don't like the seeds; any firm ripe tomato will do, but you're looking for flavour here)
English cucumber, quartered
Kalamata olives, pits OUT! (add a little olive juice for flavour, if you like)
Feta cheese, chopped or crubled into rough chunks
salt/pepper to taste
Optional: Fresh basil and/or oregano
ABSOLUTELY NO LETTUCE!!! If you insist on putting something leafy in here, make it baby spinach, for God's sake

Haven't been doing so, but it's a good idea. Add a little acidity to the proceedings...I'd suggest going easy on it (as well, go easy on the olive juice), though, as we don't want to overwhelm the natural flavours of the tomato, in particular. The cucumber, olives and feta can hold their own, however.

Refried black beans with spanish rice and a little shredded cheddar on top. I am going meatless 3 days a week now and it isnt as hard as I thought it would be. Not trying to go completely vegetarian just trying to have more balance.

Couple months in and I am up to 4 meatless days a week. Thought I would have broken by now. The other day I had a Big Mac as a treat and my stomach gurgled for hours after. Also been trying to get as much perservative free food as I can. It was an eye opener when the perservative free organic granola I bought went stale in 2 weeks, my old brand lasted for months without tasting stale.
