I had CPK at the Vegas airport in March. Had the buffalo chicken pizza which was pretty good for airport food. Came with a gorgonzola ranch dip on the side which really added to it.

Had a $3 Tombstone oven baked pizza last night.

thanks, i'm gonna make some potato salad tomorrow!!!!

Tried some Red, White and Bleu potato salad from safeways deli. Made with red and whit potatos, bacon bits and bleu cheese dressing. It was good and the bleu cheese was in the right proportion not overwhelming the dish as bleu cheese often can.

Did you know it would take you 10,000 bowls of raisin bran to equal the nutrition in one bowl of total?

It was pretty good. The crust is made of whole wheat flour, so it's not as flaky and light as a regular crust, but it tasted good. The veggies and potatoes in the cheese sauce was quite good. I think it needed salt, but I think everything needs salt.

It was definitely better than those crappy 89 cent ones by swanson or whoever.

Made egg drop toast this morning....one of my favorites.

Take two pieces of bread and cut out a medium sized hole in the middle of each slice. Cook the two eggs inside the toast in the pan (while bronzing your toast at the same time).

yum.

Not sure what to do today for lunch. Might have to hit Pollo Tropical.

no not always, but i'll imagine i eat better then most people for a couple reason

a) i can cook, actually i love cooking

b ) i'm the type of person who prefers quality over quantity

for the most part i like good food, but try to eat healthy

i have a couple junk food vice, like hot dogs but try and keep them to the occasional treat

i'm pretty light right now so i can afford to put on some pounds that's why i'm going a little overboard on the rich stuff

almond proftieroles and orange marscapone cannolis at work last night for instance, omg they were good though

a rare night off tonight so when i get home after work i'm braising short ribs and going to have them with mashed potatos and a nice salad
Nikki_N
Lunch:

6" Veggie Sub on Italian with American cheese and the works (no banana peppers or jalepenos), topped with vinegar and salt and pepper.

Dinner will be a lunchable and sliced pears on the plane to VEGAS!

How do you cook your short ribs?

I recently was home alone (wife out of town) so I had to fend for myself. I took a slab of ribs and threw them in the slow cooker doused with some chicken stock, bbq sauce, teriyaki sauce and spices. They were just ok. Very tender but the flavor combo did not seem to work out that well.

Any tips?

season (kosher salt and cracked pepper) dust with flour and brown lightly in olive oil in an oven capable pan or better dutch oven

oven at 325 preheated

add mirepoix and herbs (thyme, rosemary, garlic cloves) worchestershire sauce, beef stock and red wine to just almost cover

top with tin foil or parchment paper but don't seal you don't want to steam them

place in oven till tender, 2-3 hours

you can also add some honey, grated ginger and soy if you can to do and asian themed one

The other day I was reading about the best meals in Vegas on a pokersite(pokernews i think) and one of the dishes was lobster benedict at The Terrace Point Cafe at the Wynn. Its made with a potato pancake instead of the traditional english muffin, topped with asparagus, bacon, lobster, poached egg and hollandaise. $19 which isnt bad concidering I paid $16 for an ommelete at the Grand Lux last time in Vegas. Its on my must try for my next trip(the Fall cant come soon enough).
