Country fried steak has both it's advantages and also has it's share of cons.
The steak I think is the biggest factor, if it's not thick enough it's easily over cooked however it will become soggy if it is undercooked or has to much breading. The type of steak used matters! I hear it from both sides some swear by the minute steak others prefer a round steak. I have southern fried both and I prefer the sirloin to either one of the other two.
Gravy IS optional I like the brown gravy and the white but don't be afraid to leave off the gravy. Try Hienz 57 for a tangy alternative.
Side items can be the make or break of any southern fried meal, remember that.
grandys chicken fried steak owned, but they all got shut down here, they were never too clean
