its player dependent. against people who wont fold AA (but might not bet it either) its obv not a good spot.
against weak players who fold anything but the nuts or near nuts, its obv. good.
i cant say i hate taking a stab since they have both checked to you twice, but you def. have to fold to the raise.

just note that he likes to be tricky and if you see him start to do this a lot just check down medium hands and bet strong ones.

This is really weird. It would be an unbelievably donkish way of playing a set by villain, but there's not much you can do but fold really. I don't know if this is a great spot to bet the turn - you get called by top pair a lot, but then your pair of 8s is the current best hand more often than you would think. Getting folds from 99-QQ is pretty good for us, so I guess betting is probably fine.
