Last night I was playing 0.5/1 PLO and I was on the fortunate side of top set vs. middle set twice to stack a couple of guys.
Now, it's only inevitable that I'm going to be on the other side of things.
Is it possible to get away from middle set? let's assume it's not a draw heavy board like 2 8 K rainbow or something like that and you have 8 8 x x in the hole. If someone puts you all in on the flop, can you fold since K K x x is a possibility?

Short answer, it depends.
Long(er) answer...Preflop action, position, stack sizes, player reads, board texture, makeup of the "xx" in your hand, backdoor draws, other players in the hand left to act, etc, etc, etc are all factors you need to consider.

If it comes AXX you can sometimes get away from middle set, or if you are deep against a nit. If you're against an aggressive player it's very difficult, and almost never correct.

Don't play crappy pairs and you won't run into as many set over set as the other guy.
