1, sometimes 2
I am not great at muktitasking. I am happy if I can breath and watch at the same time...
But I think my opinion doesn't count here.

I used to be only able to do 2 tables. I've gotten up to 4 now, but I think my winrate is probably hurting because of it.

Generally I think most people play between 2-6 tables online. It is really based on your ability to focus after 2 tables. Also dependent is whether you have Poker Tracker. Playing more than 3-4 tables without PT is suicide. It's nearly impossible to watch every player and take notes with 5 tables and up, so I recommend 2-4 tables at most.
A friend of mine for instance plays 12 tables, and has a sky high winrate at 25max. He's actually a friend of Havad Khan, who made the final table of the WSOPME this year, because they used to play StarCraft together. I guess when you have the ability to play a game like that at a high level, you can focus and make split second decision on 12 different tables at once.
Then again I have a friend who plays 6 tables and is on a 70k break even stretch, which I personally attribute to him playing 6 tables. He was a winner at it for 50k, but he's started to lose after what I considered a hot streak. I believe your focus deteriorates steadily after 3 tables.

I used to multi-table. But that started to hurt me as limits went up because I was playing too robotically. I couldn't get reads on villains, and I don't use PT/PAHUD so I really had to guesstimate everything.
Now I just play slightly out of my BR on a single table instead of well within my BR on multiple. It seems more profitable this way now... but maybe it's just variance. It's also easier to distinguish the multitablers and pick on them when you're playing a single table.

Only thing I'm going to add is that 4-tabling has helped my tilt problems. You can see the variance spread out a little and a swing on one or 2 tables can be cancelled by a good run on another. Only thing is that while it's cut down on the number of times I feel tilt coming on, the times that I do get it. (when I'm running bad on all 4 tables) is much worse.

Why would I want to run bad on several tables at once?
My latest foray into online yielded three-two-outers in my first 6 hands.
I hate online. I don't know why anyone plays it, or how the hell they win at it.
I've never dodged the two outer -- not one time.

On my laptop, 2 (because I dont have a mouse). On my desktop, 3-4 depending on the stakes.

I have found playing 1-2 makes the game a lot more fun, also I feel a lot more comfortable sticking chips into the pot since I am able to get better reads.

Mac, 1 or 2, depending on what else I'm doing.
PC, 3, sometimes 4, because I have PokerTracker on there, and Mouse etc. is handy.

1,2, or 3.
Try not adding a table until you have a note on everyone. I find it motivates me to keep focused. Plus it helps me gauge if my intensity level is sufficient.

Usually 2,3 or 4.
Playing only 1 table makes me play too loose.

Typically 4. I play better when I'm playing TAG, and playing four tables helps me play the "right" hands (for me). I have a better win per table when rate when I'm only playing 1 or 2 tables, but my overall rate is better when playing 4.
I would actually consider trying upwards of 6, but I'm usually playing on my laptop, and there just isn't enough screen real estate for my eyes.

Right now, 4-6 tables, all the same level.
If/when I decide to get a new comp, it'll prob be exclusively 6 tables...
6 AP tables + PT + HUD = laggy on current comp
